Start your morning right with a pan of slow-simmered shakshuka infused with the rich, earthy depth of Grinders Cafe-Q Darkoko Coffee. The coffee softens the acidity of the tomatoes and brings out their natural sweetness, creating a sauce that feels warm, round, and deeply comforting. Perfect for slow breakfasts, lazy spring lunches, or an easy dinner shared with good bread and better company
Ingredients
Serves 4
Base
- 1 tbsp olive oil
- 1 small brown onion, finely diced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp ground cumin
- 1 tsp mild chilli flakes (or adjust to taste)
- 2 tbsp tomato paste
- 400 g can diced tomatoes (or 3–4 ripe fresh tomatoes, chopped)
- 1 tsp brown sugar
- 60 ml (¼ cup) strong Grinders Darkoko Coffee, brewed (you can also use a double espresso shot and a dash of water)
- Salt and cracked black pepper to taste
Eggs & Garnish
- 4 free-range eggs
- ½ cup crumbled feta
- A handful of fresh herbs such as parsley, mint, or coriander
- Optional: sliced spring onion, avocado, or microgreens
To Serve
Warm crusty bread, pita, or toasted sourdough
Method
- Heat olive oil in a pan over medium heat and cook the onion for 3–4 minutes until soft and translucent. Add garlic, paprika, cumin, and chilli flakes and stir for 30 seconds until fragrant.
- Mix in tomato paste, diced tomatoes, brown sugar, and Grinders Darkoko Coffee. Season, then simmer for 10–12 minutes until thick and glossy.
- Make small wells, crack in the eggs, and cover. Cook gently for 5–7 minutes until the whites are set and the yolks are still soft.
- Top with feta and herbs, drizzle with olive oil, and serve straight from the pan with warm bread for dipping.
